The Experience
Humo Negro ('black smoke') is chef Jaime Torregrosa's contemporary restaurant in Bogotá's Chapinero district, reimagining the Japanese izakaya through Latin American, Nordic and Japanese techniques applied to Colombian ingredients. Built around live-fire and charcoal cooking, it emphasises sustainable Colombian sourcing. It ranked No. 41 on Latin America's 50 Best Restaurants 2025, up from No. 45 in 2024.
